Lecitin av livsmedelskvalitet erh\u00e5lls fr\u00e5n sojab\u00f6nor och andra v\u00e4xtk\u00e4llor. Det \u00e4r en komplex blandning av acetonol\u00f6sliga fosfatider, huvudsakligen best\u00e5ende av fosfatidylkolin, fosfatidyletanolamin och fosfatidylinositol i kombination med olika m\u00e4ngder av andra \u00e4mnen som triglycerider, fettsyror och kolhydrater. Raffinerade lecitinkvaliteter kan inneh\u00e5lla vilken som helst av dessa komponenter i olika proportioner och kombinationer beroende p\u00e5 vilken typ av fraktionering som anv\u00e4nds. I sin oljefria form avl\u00e4gsnas de flesta triglyceriderna och fettsyrorna och produkten inneh\u00e5ller 90 % eller mer fosfatider, vilket representerar hela fosfatidkomplexet eller vissa fraktioner.
